A couple Saturdays ago I attended the PA Eastern Bloggers Meetup held at Terrain, right outside of Philly.  Twas a sweet afternoon indeed meeting up with other gorgeous gals of the blogasphere and gobbling up the yummiest pumpkin carrot pancakes I ever did see.  We chatted of all things halloween, our awesome hubbles, and even cars...yes cars, lol.  And if you've ever been to A Terrain before - well, it's basically the Anthropologie of the outdoors boasting the prettiest plants, a darling & delicious cafe, and garden-wares to make your heart swoon for days.  Um yeah, it was hard leaving that place.  Yes, I want to go back...like now!

The only lovely lady of the group I met before was Katherine from Of Corgis and Cocktails - and I can hardly believe that was even a year ago that we hung out.  But all the gals were sweet as can be and I simply cannot wait for another meetup to be held.  Aren't they the best?

Friday Favorites // October Edition

Hello again, 

It's the end of the month, so I am back with my Friday Favorites along with a couple of my lovely sponsors and all the things that have put that little sparkle in our eyes for the month of October.

Uh these fawn and mushroom print tights...I don't think I need to explain.  Can I just tell you how bad I would love a pair of these in my drawer of tights?

Keeping with the animal theme, because we all love cute little critters, don't we?  I just adore this little fox pullover.  What I would give to stumble across a similar one of these at the thrift store.  Until then, this little number will be keeping me quite dreamy-eyed.

Ok, so I know we've seen a ton of Alice in Wonderland inspired costumes and even clothing in the past couple years, but this little gal's Alice number just tugged at my heartstrings and I couldn't help but just totally be thrown into swoon-mode by it.  If I ever have a little girl of my own, this homemade costume will be on the top of my list for her.  Cute, cute, cute.

Every year for Halloween my grandparents would buy loads of Halloween candy, then my dear grandfather would sit at the dining room table and make little baggies of it for all the trick-or-treaters that would come by.  I always thought it was pretty cool that he gave out quite the assortment of Hershey minis, sweet tarts, mini snickers and so on, unlike the other houses which only gave out one kind.  Year after year, I would sit with him and help him make the baggies, so naturally stumbling across this creative way of making them got me all kinds of excited and brought back many sweet memories.

I made these whoopie pies last weekend and they were out of this world. I even roasted the pumpkin from scratch. (patting myself on the back). Pumpkins are what fall is all about

I am loving these vintage plates with anatomical skulls fired onto them. They would be awesome to use for your seasonal place settings on your dining table or for a Halloween themed dinner party! I think its such a neat idea! Why didn't I think of that?!

What I Baked // October Edition: Pumpkin Carrot Cupcakes with Maple Frosting

Hello and happy Monday Darlings!

Well this weekend was certainly another busy one and has unfortunately left me with a little fall cold of sorts, but nothing some hot tea and a nice big bowl of soup can't cure.  In my case of the sniffles, I always get the urge to bake up something sweet and delicious - I blame that fully on my sweet-tooth.  Anyhow, these pumpkin carrot cupcakes with maple cinnamon frosting have been a favorite since Autumn began and this was my fifth time giving these little cakes a go because they are just that yummy and easy to make.

What You Need:
Cakes:
2 cups all-purpose flour

2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
4 eggs at room temperature and lightly beaten
1 ½ cups sugar
1 cup unsweetened apple sauce
15 oz. can pumpkin puree
2 cups shredded carrots
½ cup sweetened coconut flakes

Frosting:
1/2 cup butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
2 tablespoons maple syrup
1 teaspoon cinnamon

Directions:

Preheat oven at 350 degrees.

In a medium bowl stir together flour, baking powder, pumpkin pie spice and baking soda and set aside.

In a medium bowl blend eggs, sugar, applesauce and pumpkin puree.  Add in flour mixture until well combined followed by shredded carrots and coconut flakes.

Pour in to lined cupcake tins ⅔ full.  Bake for 18-20 minutes until cake tester comes out clean.

Cool on a wire rack.

FROSTING: 

Make sure the butter & cream cheese are SOFT. Beat the butter in bowl with electric mixer until light and fluffy. Add the cream cheese and beat together until well blended.

Add the maple syrup and cinnamon. Mix until well combined.

Gradually add the powdered sugar, beating until light and fluffy, and frosting consistency is formed.

 **If frosting is too thick for your liking, you can add 1 tablespoon of milk at a time until it reaches the desired consistency.**.

Pipe a dollop of frosting onto the cakes, sprinkle with a little cinnamon and Enjoy!
